Ingredients

  • 3 cups shredded coconut
  • 2 scoops AYRA vanilla protein powder
  • 1 egg white
  • Salt to taste
  • 1 tablespoon tapioca flour or cornstarch

Preparation

  1. Preheat the oven to 375°F (190°C).
  2. In a food processor, blend the shredded coconut until finely chopped.
  3. Transfer the coconut to a bowl and add the protein powder, egg white, salt, and tapioca flour. Mix well until combined.
  4. Use a spoon to scoop out the mixture and gently place each portion onto a baking tray, leaving some space between each cookie.
  5. Bake for 20 minutes or until the tops are lightly golden and the bottoms are golden brown.
  6. Let the cookies cool for 10 minutes before enjoying.
