Ingredients
- 3 cups shredded coconut
- 2 scoops AYRA vanilla protein powder
- 1 egg white
- Salt to taste
- 1 tablespoon tapioca flour or cornstarch
Preparation
- Preheat the oven to 375°F (190°C).
- In a food processor, blend the shredded coconut until finely chopped.
- Transfer the coconut to a bowl and add the protein powder, egg white, salt, and tapioca flour. Mix well until combined.
- Use a spoon to scoop out the mixture and gently place each portion onto a baking tray, leaving some space between each cookie.
- Bake for 20 minutes or until the tops are lightly golden and the bottoms are golden brown.
- Let the cookies cool for 10 minutes before enjoying.
