Ingredients:
- 120g coconut oil
- 150g 70% dark chocolate
- 2 green apples, pureed
- 1 tablespoon psyllium (or substitute with ground flaxseed)
- 20g natural sweetener (stevia)
- 200g oat flour
- 100g unsweetened cocoa powder
- 60g AYRA protein powder
- 280g plant-based milk
- 1 tablespoon white vinegar
- 1 teaspoon baking soda
- 1 teaspoon instant coffee
- 4g salt
- 100g walnuts
Chocolate Sauce:
- 2 scoops chocolate veggie protein
- 1 tablespoon unsweetened cocoa powder
- 20g 70% dark chocolate
- 2 tablespoons coconut oil
- 1/4 cup plant-based milk
- 1 tablespoon orange zest
- 1/2 teaspoon ground cardamom
Preparation:
- Preheat the oven to 180°C (356°F) and line a baking tray with parchment paper.
- Melt the coconut oil and dark chocolate together over low heat.
- In a large bowl, combine the apple purée, psyllium, and stevia. Add the melted chocolate mixture and stir well.
- Gradually add the oat flour, cocoa powder, protein powder, plant-based milk, vinegar, baking soda, instant coffee, salt, and walnuts. Mix until smooth.
- Pour the batter into the prepared tray and bake for 25-30 minutes or until a toothpick inserted comes out clean.
- For the chocolate sauce, melt the dark chocolate with coconut oil and stir in the cocoa powder, protein, plant-based milk, orange zest, and cardamom until smooth.
- Once the brownies are baked, let them cool and drizzle with the chocolate sauce.
