Ingredients:

  • 120g coconut oil
  • 150g 70% dark chocolate
  • 2 green apples, pureed
  • 1 tablespoon psyllium (or substitute with ground flaxseed)
  • 20g natural sweetener (stevia)
  • 200g oat flour
  • 100g unsweetened cocoa powder
  • 60g AYRA protein powder
  • 280g plant-based milk
  • 1 tablespoon white vinegar
  • 1 teaspoon baking soda
  • 1 teaspoon instant coffee
  • 4g salt
  • 100g walnuts

Chocolate Sauce:

  • 2 scoops chocolate veggie protein
  • 1 tablespoon unsweetened cocoa powder
  • 20g 70% dark chocolate
  • 2 tablespoons coconut oil
  • 1/4 cup plant-based milk
  • 1 tablespoon orange zest
  • 1/2 teaspoon ground cardamom

Preparation:

  1. Preheat the oven to 180°C (356°F) and line a baking tray with parchment paper.
  2. Melt the coconut oil and dark chocolate together over low heat.
  3. In a large bowl, combine the apple purée, psyllium, and stevia. Add the melted chocolate mixture and stir well.
  4. Gradually add the oat flour, cocoa powder, protein powder, plant-based milk, vinegar, baking soda, instant coffee, salt, and walnuts. Mix until smooth.
  5. Pour the batter into the prepared tray and bake for 25-30 minutes or until a toothpick inserted comes out clean.
  6. For the chocolate sauce, melt the dark chocolate with coconut oil and stir in the cocoa powder, protein, plant-based milk, orange zest, and cardamom until smooth.
  7. Once the brownies are baked, let them cool and drizzle with the chocolate sauce.
